One of the best parts about fall is pumpkin bread. Sure you can make it other times of the year, but it just isn't the same.
3.5 c flour (I used all-purpose for about 3 cups and whole wheat for the rest)
2 to 3 c sugar (I usually use somewhere between 2 and 2.5)
2 t baking soda
1.5 t salt (or less)
1.5 t nutmeg
1.5 t cinnamon
1 c oil
2/3 c water
4 eggs
2 c pumpkin (I use 1 15 oz can)
(Most of 1 bag of semi-sweet or dark chocolate chips)
1 - mix dry ingredients and make a dent in the center
2 - add wet ingredients
3 - blend until smooth
(Add chocolate chips)
4 - bake at 350 1 to 1.5 hrs for loaf...20-25 min for muffins
Enjoy with your hot beverage of choice.
